ingredients

  • shaker 250ml Havana Club Especial
    100 Coconut Water Syrup (1:1)
    2 Cinnamon Sticks
    250ml Pineapple Juice
    100ml Fresh Lime
    300ml Coconut Milk
    50ml Coconut Water Syrup (1:1)
    added after clarification
  • garnish per serving 2 Pineapple Leaves &
    Stamped Ice Block

steps

To make your Coconut Water Syrup, stir together equal parts Coconut Water and Caster Sugar.

For the Milk Punch, combine the first 4 ingredients in a large container. Pour the milk and fresh lime in at the same time. Quickly stir for a few seconds to agitate, then leave to infuse for 12 hours.

Strain liquid through a double blue cloth in the fridge to clarify. Do not squeeze the bag.

For maximum clarification, capture the first 10-15 seconds of liquid that filters through, and pour it back through the curds. The total yield is
approximately 75-80%.

Add a further 50ml of Coconut Water Syrup (1:1) to your final clarified
liquid.

Bottle up, refrigerate and use within 2 weeks. Serves 6.
